This is a simple to make, quick sauce that goes well with chicken or prawns or crunchy vegetables. It tastes a bit sweet, a bit sour,a bit garlicky and a bit hot (but you can make it mild if you prefer)


bit of oil

1 stalk lemongrass (very finely chopped)

3 cloves garlic, finely chopped or crushed

3 chopped tomatoes

1-2 birdseye chillies (or cayenne pepper if you want it less hot)

1 piece of fresh ginger (about the size of a walnut) sliced or chopped

juice of 1 lemon or 2 limes

half tsp salt

1 tbsp mango chutney or marmalade


In some oil, add the garlic, lemongrass, ginger and allow their flavours to unfold in the hot oil. Add the  tomatoes and allow these to soften and fall apart.

Add the lemon or lime juice, salt and chutney (or marmalade) and stir it in well so the sauce is thick and even. This can happily sit on the hob until you are ready for it. Add the prawns to heat through about 5-10 minutes before you want to serve this up.
